Thanksgiving Day. I baked for several hours last night to get ready. For some reason, I have not been having much luck with pies lately. Last year I made a pumpkin pie in such a hurry that I forgot to add sugar. Just in case you are wondering, it doesn’t look any different. There was no way of knowing until you took a bite. Pumpkin pie without sugar is pretty disgusting.
I have never been able to get a pecan pie to set. I have tried 5 different recipes. I have a gas oven. I make sure the oven is pre-warmed. I bake the pie for the correct amount of time. It never works. Ben still likes to eat his pecan soup, though. Last time I did at least get it to the consistency of pudding.
This year I made pumpkin pie, with sugar, pecan pie that doesn’t seem to have set, the truth will come out when we slice it, apple pie with a slightly burnt crust, and sweet potato souffle. If nothing else, the pumpkin pie and sweet potato souffle should be edible.
